Black-forest cake

A cake with layers of deliciousness. This chocolaty goodness is the perfect cake for a nice birthday celebration at home. And the best part for vegetarians - its eggless!!



I learnt this recipe at a cake workshop which I attended when I first started baking and had very little knowledge about the basics of baking. Since then I have made it lot of times and it has never failed me.


The cake takes about 3 hours to prepare and weighs about 1kg after all the icing is complete.


 

Ingredients:

For cake:

  • Maida - 100g (or 1cup)

  • Condensed milk - 200ml

  • Butter - 2 tbsp

  • Baking powder - 1/2 tsp

  • Baking Soda - 1/2 tsp

  • Vanilla essence - 1 tsp

  • Aerated water - 100 ml

  • Cocoa powder - 1 tbsp

For assembling:

  • Pepsi/Coke - 1/2 cup

  • Whipped cream - around 300g

  • Mixed fruit jam - 1/2 cup

  • Chocolate shards - as much as you like

  • Cherries


Use all ingredients at room temperature. I have used Amul Mithai mate for condensed milk here. Beat condensed milk and butter together in a vessel. You can also use Ghee if butter is not available. Add vanilla essence and make smooth paste. Sieve together maida, cocoa powder, baking powder and baking soda in batches along with aerated water little at a time. Mix until just combined and do not over mix. Pour the mixture into greased mold(coat ghee/butter and dust maida on all surfaces of mold). Bake in pre-heated oven at 180°C for 18-20 mins.


Once the cake is baked and cooled down, split it into 2 or 3 equal layers. Moisten each layer with pepsi/coke so that the pastry remains moist. You can also use sugar-water syrup instead of the soda. On the first moist layer, add a thin layer of jam next to give it the feel of a Black-forest cake. Add a layer of whipped cream on top. I use a brand called Tropolite which is in the consistency of milk-shake and needs to be whipped after it is in room temperature. You can also use any of the whipped cream powders you find in supermarkets and follow the instructions on the pack to whip it. Repeat the same steps for the remaining layers. Use whipped cream to cover the top and sides of the cake. Decorate the cake with chocolate shards and cherries. Now cherries are optional, but they make the cake look professional as you can see below:
