Chocolate cupcake with buttercream icing

Cupcakes are fun to eat and make. With the right icing, nobody can deny a good cupcake anytime of the day.

This super easy recipe of moist chocolate cupcake which is complimented beautifully with creamy buttercream icing is the goto recipe for any amateur baker.



This is a recipe I got off the internet to which I have made a few changes to make it egg-less and moist. It is one of the first recipes I have ever tried in baking and has never failed me till date. All ingredients used here are easily available.


You can make around 18 cupcakes in an hour with this recipe.


 

Ingredients:


For cupcake:

  • Maida(All purpose flour) - 1 1/2 cup

  • Granulated sugar - 1 cup

  • Cocoa powder - 1/2 cup

  • Baking soda - 1 tsp

  • Salt - 1/2 tsp

  • Milk - 1 cup

  • Oil - 1/2 cup (use non-scented refined oil)

  • Vanilla Extract - 1 tsp

  • Vinegar - 2 tsp

For buttercream icing:

  • Butter - 75g (Unsalted)

  • Icing sugar - 150g

  • Cocoa powder - 50g (or as per your taste)

  • Vanilla extract - 1/2 tsp

  • Salt - 1/8 tsp

  • Milk - 1/4 cup (if required add as needed)

Method:


Mix milk and vinegar in a bowl and let it stand for a couple of minutes. Add the granulated sugar and mix till all the sugar melts. Add oil and vanilla essence to the mixture and whip till everything is combined well. Sieve in maida, cocoa powder, baking soda and salt and mix till just combined.

Pour mixture into cupcake moulds. Bake in pre-heated oven for 15-20 mins at 180°C.


Beat butter in a bowl a little before actually adding the icing sugar. Add icing sugar little at a time so that it gets combined well and does not spill out of the container. Add cocoa powder, vanilla extract and salt and whip well till mixture is light and fluffy. Add milk if you feel mixture is too dry. Do not add excess milk as icing will become runny and you will not be able to pipe it properly on the cupcake.


Pipe the mixture onto the cupcakes using any nib you like. Below pictures of different nibs I have used:




 

The cupcakes in itself without the icing comes out really well and you can just have them directly if you do not have the patience to pipe the icing because of the mouth-watering smell of the freshly baked cupcakes :P
