THE cake to prepare for a special celebration at home. A piece of this cake is heaven for chocolate lovers. And again, it's Eggless!!

This cake brings back memories of me as a kid looking through the glass shelves in the bakery at the decadent truffle cake and drooling all over. Making it at home was one of the best decisions I made as the cake came out so well that it got over in minutes.
It takes about 4 hours to prepare around one and half kilograms of cake.
Ingredients:
For cake:
Maida - 150g (1 1/4 cup)
Cocoa powder - 25g (1/4 cup)
Baking soda - 1/2 tsp
Baking powder - 1 tsp
Butter - 80g (salted)
Sugar - 60g
Condensed milk - 5 tbsp
Milk - 1/2 cup (125ml)
Vanilla essence - 1 tsp
Instant coffee powder - 1 tsp
For Sugar syrup:
Sugar - 3 tbsp
Water - 1/2 cup
Chocolate ganache:
Heavy cream - 2 cups (400ml)
Dark chocolate - 4 cups (750g) [chopped]
Butter - 2 tbsp (10g) [salted]
Sugar balls - as required for decorating
Method:
Double sift all dry ingredients in a large bowl - maida, cocoa powder, baking soda and baking powder - to incorporate air into the mixture. In another large bowl, mix butter, sugar and condensed milk till they are well incorporated. In a separate cup mix milk, vanilla essence and instant coffee powder. Add the dry mixture into the the wet mixture with small quantities of milk mixture in batches and mix well. Pour the batter into a greased tin and bake it in the oven for 20-25 mins at 180°C.
Once the cake is baked and cooled, cut it into 2 or 3 layers according to the thickness of your cake.
Boil the water and sugar till all the sugar is dissolved. Cool the mixture and brush it on all the layers of the cake.
Bring the heavy cream to an almost boil and pour it all over the chopped chocolate. Add in the butter and rest it for a couple of minutes. Mix the chocolate to form a nice flowy liquid. Use double boiler method to melt the chocolate if it is not melted properly. Refrigerate the mixture for 3-4 hours before frosting the cake.
Frost the cake as you like using the chocolate mixture. Melt the ganache a little as required for shine and easy application. Use the sugar balls as required for decorating the cake.
