Kaju-Khova Muffins

Yup you read it right!! It is a muffin made of Kaju(cashew) and Khova. It is super light and extremely tasty. A must try recipe!!



I learnt this recipe at a baking workshop and have been in love with this since then. It is one of the best mid-night snacks.


It takes about 30 mins to prepare 12 normal sized muffins or 24 smaller ones as shown in the picture.


 

Ingredients:

  • Maida: 100g

  • Milk maid: 200g

  • Khova: 100g (grated)

  • Baking powder: 1 tsp

  • Baking soda: 1/4th tsp

  • Milk powder: 2 tsp

  • Cashew powder: 2 tbsp

  • Butter: 3 tbsp

  • Vanilla essence: 1 tsp

  • Cashew pieces: 1/4th cup (roughly chopped)

  • Milk: as required

Method:


Mix all wet ingredients - milk maid, grated khova and butter. Mix well till there are no lumps. Sieve together dry ingredients - maida, baking powder, baking soda and milk powder. Mix till everything is well combined. Add vanilla essence, cashew powder and cashew pieces. Add milk as required if the mixture seems to be thick. Pour the batter into lined cupcake moulds or ramekins. Bake in pre-heated oven at 180°C for 20mins.
