Gajar ka halwa

Hot Gajar ka halwa with cold vanilla ice-cream... HEAVEN!! This combination brings back a lot of childhood memories and is evergreen even today. This simple recipe of Carrot halwa will make you want to try it out too.



There are a lot methods to prepare Carrot halwa. I follow my mother's recipe of grating the carrot and cooking it with milk.


It takes about an hour to prepare 6 servings.

 

Ingredients:

  • Carrot - 1 kg

  • Ghee - 1/4 cup

  • Cashew - 10 (chopped)

  • Almonds - 10 (chopped)

  • Raisins - 10

  • Milk - 3 cups

  • Sugar - 3/4 cup

  • Khowa - 1/2 cup

  • Cardamom powder - 1/4 tsp

Method:


Peel the skin of carrot and grate finely. In a large kadai heat ghee and fry cashew, almonds and raisins. Fry until it turns golden brown and keep aside. In the same ghee, add grated carrot. Saute for 5 minutes or until it changes color slightly. Pour milk and give a good stir. Boil for 10 minutes stirring occasionally. Continue to boil until the carrots are cooked well and milk reduces. Once the milk thickens completely, add sugar. Mix well and cook until the sugar dissolves and thickens. Cook until the halwa thickens and ghee releases from sides. Turn off the flame and khowa, cardamom powder and fried nuts. Mix well making sure everything is well combined.

 

The halwa can be enjoyed hot or chilled according to your taste. You can modify the quantities of dry-fruits I have used her as per your liking as well.
