Pineapple cake

The pineapple cake is one of my favorite pastry cakes that I used to buy in bakeries for any occasion. The juicy soft pastry and the fragrance of the pineapple is an all time family favorite. Do try out my recipe and let me know how you liked it!



This is again one of the recipes I learnt at a cake workshop. It is super easy to prepare and has never failed me.


The cake takes about 3 hours to prepare and weighs about 1kg after all the icing is complete.


 

Ingredients:


For Cake:

  • Maida - 1 cup (100 g)

  • Condensed milk - 200 ml

  • Butter - 2 tbsp

  • Baking powder - 1/2 tsp

  • Baking soda - 1/2 tsp

  • Pineapple essence - 1 tsp

  • Yellow food color - 2 drops (optional)

  • Aerated water - 100 ml

For assembling:

  • Pineapple syrup from tin / pineapple juice / Sprite + pineapple essence - 1/2 cup

  • Whipped cream - 400 g

  • Pineapple pieces

  • Silver sugar balls - as required

  • Yellow food color - 2 drops (optional)

Method:


Use all ingredients at room temperature. I have used Amul Mithai mate for condensed milk here. Beat condensed milk and butter together in a vessel. You can also use Ghee if butter is not available. Add pineapple essence and make smooth paste. Add yellow food color if you want the cake to be a brighter shade of yellow. Sieve together maida, baking powder and baking soda in batches along with aerated water little at a time. Mix until just combined and do not over mix. Pour the mixture into greased mold(coat ghee/butter and dust maida on all surfaces of mold). Bake in pre-heated oven at 180°C for 18-20 mins.


Once the cake is baked and cooled down, split it into 2 or 3 equal layers. Moisten each layer with the syrup or juice prepared so that the pastry remains moist. You can use any of the above mentioned syrups as all of them work which is softening the cake. On the first moist layer, add a layer of whipped cream on top. I use a brand called Tropolite which is in the consistency of milk-shake and needs to be whipped after it is in room temperature. You can also use any of the whipped cream powders you find in supermarkets and follow the instructions on the pack to whip it. Repeat the same steps for the remaining layers. Use whipped cream to cover the top and sides of the cake. Decorate the cake with pineapple pieces, silver sugar balls and yellow colored whipped cream by adding the food color.

 

I have seen a lot of elder people not liking chocolate cakes, but they usually like the mildness of any fruit cake. The pineapple cake is well liked among everyone and looks very pretty too. Hope you enjoyed baking the cake.
