Pista Tres Leches cake

The trending tres leches cake is super moist and very easy to prepare. I tried making the cake in Pista flavor as I had never before tried Pista flavored cakes, and it came out really well. And again, this is an eggless recipe!



A tres leches cake is basically a sponge cake soaked in three kinds of milk: evaporated milk, condensed milk, and heavy cream. This recipe is a combination of bits and pieces of other recipes on the net.


It takes about 3 hours to prepare the cake which can be proportioned to 8-9 pieces.


 

Ingredients:


For Cake:

  • Maida - 1cup

  • Baking powder - 1 tsp

  • Baking soda - 1/2 tsp

  • Powdered sugar - 3/4 cup

  • Pistachio - 1/4 cup [grind into fine powder]

  • Yogurt or curd - 1/2 cup

  • Oil - 1/4 cup

  • Pista essence - 1/2 tsp

  • Green food color - 3-4 drops

  • Milk - 1/2 cup

Milk mixture:

  • Milk - 1 cup

  • Condensed milk - 1/4 cup

  • Heavy cream - 1/4 cup

  • Green food color - 1/4 tsp

Assembling cake:

  • Whipping cream - 1 cup [whipped]

  • Pista - as required [roughly chopped]

  • Rose petals - as required [roughly chopped]

Method:


In a large bowl, mix all dry ingredients - maida, baking powder, baking soda, powdered sugar and powdered pistachio. In another large bowl, mix yogurt and oil till they are well combined. Add pista essence, green food color and mix well. Add the mixture of dry ingredients slowly and mix with small quantities of milk till all the ingredients are well combined. Pour the mixture into a greased mould and bake for 15-20 mins at 180°C.


In a cup, mix milk, condensed milk, heavy cream and green food color till mixture is smooth.


Once the cake is baked and cooled, prick the cake uniformly with a fork and pour the milk mixture uniformly as required. Save the rest of the milk mixture for serving. Refrigerate the cake with milk mixture for about 30 mins till the mixture is well absorbed.


To assemble the cake, cover the top of the cake with a thick layer of whipping cream. Garnish the cake using chopped pista and rose petals. Serve a piece of the cake on a plate and pour the milk mixture around the piece.
