The crispier and quicker version of the already perfect dosae is the ravae dosae. This is an instant dosae and does not need fermentation.

The Ravae dosae is made out of Rava(semolina) as the name suggests. The dosae comes out very crisply as it is very thin.
It takes about 30mins to prepare 12 dosaes with this recipe.
Ingredients:
Semolina - 1/2 cup [fine semolina]
Plain flour - 1/2 cup
Rice flour - 1/2 cup
Cumin seeds - 2 tsp
Green chillies - 1 tbsp [finely chopped]
Curry leaves - 1 tbsp [finely chopped]
Coriander - 1 tbsp [finely chopped]
Salt - 2 tsp
Oil - as required
Water - 2 1/2 cup
Method:
In a large bowl, add semolina, plain flour, rice flour, cumin seeds, green chillies, curry leaves, coriander and salt. Mix with first 1 cup of water till there are no lumps in the batter. Add the remaining water and mix well till a watery mixture is obtained.
Pour the batter on hot tawa from a little bit of height as we want the dosae to be thin and have nice gaps in between. Use oil to make the dosae crispy. Serve with coconut chutney.
