Thambuli

This easy curd based dish is so tasty and healthy that you will want to have it everyday, not to mention it's very easy too.

Thambuli is a type of buttermilk eaten in the Indian state of Karnataka. Thambuli, being a curd based cuisine, is consumed with rice. Thambuli is derived from Kannada word thampu, meaning cool/cold. So thambuli is a cooling food usually had at the beginning of the meal. It can be prepared with lot of different roots and herbs, but the most common ones are ginger, fenugreek and Doddapathre soppu(Indian borage).
Ingredients:
Ginger - 1 inch or Doddapathre soppu - 6-7 leaves
Pepper - 1/2 tsp
Cumin - 1/2 tsp + 1/4 tsp
Ghee - 1 tsp
Coconut - 1/4 cup (grated)
Salt - to taste
Curds - 1/4 cup
Oil - 2 tsp
Mustard seeds - 1/4 tsp
Asafoetida - 1 pinch
Curry leaves - 1 tsp (chopped)
Dried red chillies - 2
Method:
Heat ghee in a pan and slightly roast peeper, cumin and Doddapathre soppu/ginger peices. Grind this mixture with grated coconut. Transfer it to a bowl and add required salt and curds. You can add more curds or replace curds with buttermilk as per your liking.
In a small kadai, temper oil. Add mustard seeds, 1/4 tsp cumin, asafoetida, curry leaves and red chillies. Add this tempering to the curds mixture and mix well.
