Corn Pulao is one of the simplest rice recipes which I have come across. It is the perfect dish for family lunch which everyone will love.

This is again my mother's recipe. It is super easy and gets prepared pretty quickly.
It takes about 1 hour to prepare 4 servings.
Ingredients:
Rice - 1 cup (preferably Basumati)
Sweet Corn - 1 cup
Green chillies - 4-5
Ginger - 1 inch
Oil - 2 tbsp
Ghee - 2 tbsp
Cinnamon - 1 inch
Clove - 5-6
Marathi moggu - 1
Pudina - 1 small bunch (finely chopped)
Salt - to taste
Method:
Soak rice by washing and draining the water for atleast 20 mins. Grind green chillies and ginger to form a paste. In a kadai, heat oil and ghee. Add Cinnamon, cloves, Marathi moggu and fry. Add the chillies-ginger paste and fry. Add the chopped pudina and fry till it is cooked. Add corn, soaked rice and mix well till well combined. Add 2 cups of water and required salt. Let it boil for few minutes and then pressure cook for 2 whistles.
