I had always enjoyed the store bought kaju katli since a little kid. I always thought the technique and process was too difficult to try it out at home. This recipe from Hebbar's Kitchen looked super easy and that's when I thought of trying it out.
It takes about 30 mins for around 20 pieces depending on the size.
Ingredients:
Cashew / kaju - 2 cup
Sugar - 1 cup
Water - ½ cup
Ghee - 1 tsp
Cardamom powder - ¼ tsp
Method:
Grind the cashews into a fine powder and run it through a sieve. In a vessel, add the sugar and water and stir till the sugar dissolves. Boil for 5 mins till 1 string consistency is attained. Add the cashew powder and mix well. Add ghee and cardamom powder and mix till the paste separates the vessel. Transfer the mixture onto a greased butter paper and knead slightly till a soft dough is formed. Roll out the dough such that it is slightly thick and uniform. Allow it to cool for few minutes but not completely. Cut into uniform pieces and serve.
