Shout out to all vegetarians to try this simple but super tasty paneer biryani recipe. I am sure you will try this again and again once you have tasted it.

This layered biryani is a recipe which I tasted at my neighbor's house in Loughborough, UK. I fell in love with the simplicity of the recipe and had to make it and share it with all of you.
It takes about an hour to make 3-4 servings using the below recipe.
Ingredients:
Basmati Rice - 1 cup
Onion - 1/2 + 1 1/2 [sliced thinly]
Tomato - 2 [roughly chopped]
Paneer - 100g [cubed and rested in warm water]
Oil - 2+2 tbsp
Bay leaves - 1
Aniseed flower - 2
Cloves - 5-6
Turmeric powder - 1 tsp
Red chilli powder - 1-2 tbsp [depending on your spice level]
Garam masala - 2 tsp
Salt - as required
Pudina leaves - 10-12
Method:
Wash and rinse the Basmati rice in water. Add 1 1/2 cup water for 1 cup rice and pressure cook for 2 whistles.
In a kadai, add 2 tbsp oil and add 1/2 thinly sliced onion. Fry on low heat till they turn crispy. Remove it and save in a cup.
Add 2 tbsp oil in a kadai and saute all whole spices - bay leaves, aniseed flower and cloves. Add remaining 1 1/2 thinly sliced onion and fry till they turn translucent. Add chopped tomatoes and fry till they turn soft. Add turmeric powder, red chilli powder, garam masala, salt and mix well. Add paneer and little water to adjust consistency and mix.
In a cooker (or rice cooker), add a layer of the above paneer mixture. Top it with a layer of rice. Add few pudina leaves. Repeat the same layers again. Top with fried onions. Close and heat for 2-3 mins. Serve with raita and papad.
