The go-to dish in most restaurants for vegetarians is the majestic paneer butter masala. It is one of my favorites and I am sure many of yours too.

This is a very simple dish and pretty easy to prepare. Most recipes on the internet are similar to this one. I have tweaked it a bit to my taste.
This recipe takes 30 mins to prepare 4 servings.
Ingredients:
Paneer - 200g (uniformly cubed)
Onion - 2 medium sized (roughly chopped)
Tomato - 2 medium sized (roughly chopped)
Cashew nuts - 6-7
Capsicum - 1/2 (cubed pieces)
Red chilli powder - 1tbsp
Garam masala - 1/2 tbsp
Salt - to taste
Oil - 1 tbsp + 1 tbsp
Butter - 1 tbsp
Coriander leaves - 2 tbsp (finely chopped)
Fresh cream - 1 tsp (optional)
Method:
Add paneer cubes to luke warm water and let it sit for a minimum of 20 mins. I have found this step to be very useful to keep the paneer soft and moist.
In a kadai, heat 1 tbsp of oil. Add chopped onion and tomato. Fry till they are soft. Add cashew nuts and take the mixture off the heat. Grind the mixture to a smooth paste once it is cooled down.
In the kadai, heat butter and oil. Add the onion and tomato paste to it. Fry till the oil starts to separate. Add the capsicum pieces to it and boil for few more minutes. Add red chilli powder, garam masala and salt. Mix well till everything is well combined. Add paneer and mix softly so that they do not break. Add chopped coriander leaves and fresh cream on top to garnish.
Serve it hot with chapathis, pooris or parathas. Do try it out and let me know how you liked it in the comments below.
