Pudina Pulao

Easy and tasty colored rice for a perfect weekend lunch with the family. This pulao looks and smells delicious which the whole family will enjoy.



This recipe is page from my mother's cookbook. She had tweaked the original recipe and made it healthier so that we as kids wouldn't complain about having to eat more green leaves.


It takes about an hour to cook up this recipe for 2 servings.


 

Ingredients:

  • Rice - 1 cup

  • Pudina(mint) leaves - 2 cups

  • Onion - 2(thinly chopped) + 1/2 (roughly chopped) [medium sized onions]

  • Green chillies - 4

  • Green Peas - 1/4 cup

  • Garam masala - 1/2 tbsp

  • Grated coconut - 1/2 cup

  • Ginger - 1 inch

  • Oil - 2 tbsp

  • Pulao leaf - 1

  • cloves - 4-5

  • Cinnamon - 1 inch

  • Salt - to taste

  • Water - 1 1/2 cup

Method:

Rinse the rice in water. Drain all the water and allow to soak for 20 mins.

Grind together grated coconut, 1/2 an onion, pudina leaves, green chillies and ginger.

In a vessel, heat oil and add pulao leaf, cloves and cinnamon. Add 2 chopped onions and fry. Once the onion turns transparent, add green peas and fry. Mix in the soaked rice. Add the mixed masala containing the pudina leaves and garam masala. Mix till it is combined well. Add 1 1/2 cup water and bring it to boil. Add salt as required and pressure cook for 2 whistles.
