Ragda Patties

Another one of my favorite chaats is the spicy and tangy Ragda patties. Ragda patties is a dish of mashed potato patties and gravy, and is a popular street-food in Maharashtra. This super easy recipe of it is a must try.



This is an old recipe which my mom had written down while watching a cooking show on the television. Most of the recipes on the internet are very similar to it. I have made a few improvisations to it to suit my taste buds.


It takes about an hour to make 6 servings.

 

Ingredients:


For Patties:

  • Potato - 4 large (boiled and mashed)

  • Flattened rice - 1/4 cup (rinsed)

  • Turmeric powder - 1/4 tsp

  • Red chilli powder - 1 tsp

  • Chaat masala - 1/4 tsp

  • Cumin powder - 1/4 tsp

  • Salt - to taste

  • Oil

For Ragda:

  • White peas - 1 cup (Soaked over-night)

  • Turmeric powder - 1/2 tsp

  • Red chilli powder - 1 tsp

  • Salt - to taste

For green chutney:

  • Green chillies - 10

  • Ginger - 1 inch

  • Coriander seeds - 2 tsp

  • Coriander leaves - 1/4 bunch

  • Salt - to taste

For sweet chutney:

  • Tamarind - 100g

  • Jaggery - 100g

  • Cumin powder - 1 tsp

  • Red chilli powder - 1/2 tsp

  • Salt - 1/2 tsp

For assembling:

  • Onion - 1/4 cup (chopped)

  • Tomato - 2 tbsp (chopped)

  • Coriander leaves - 2 tbsp (chopped)

  • Sev - 2 tbsp

  • Roasted peanuts - 2 tbsp (optional)

Method:


In a large mixing bowl, mix mashed potatoes, flattened rice, turmeric powder, red chilli powder, chaat masala, cumin powder and salt. Mix all ingredients till they are well combined. Form patties with adequate amount of the mixture and shallow fry in oil.


In a pressure cooker, add soaked white peas, red chilli powder, turmeric powder and salt. Pressure cook for 4 whistles. Mash the mixture slightly to form gravy consistency.


Grind green chillies, ginger, coriander seeds, coriander leaves and salt. Add little water as required to form chutney consistency.


Soak tamarind with jaggery and a little water. Squeeze out the tamarind and add cumin powder, red chilli powder, salt and mix.


In a plate, pour generous amount of ragda prepared. Place one patty. Again add little ragda mixture, green chutney, sweet chutney, chopped onion, chopped tomato, sev, roated peanuts and chopped coriander leaves.

 

The quantities of green chutney and sweet chutney can be varied according to your likeliness to spice levels. As mentioned, the roasted peanuts are optional and I like adding them as they give a textural difference on the plate.
