The easiest and most tasty Khichdi according to me is the Sabudana Khichdi. It is the perfect breakfast recipe with all indigenous ingredients.

Sabudana Khichdi is a popular and healthy dish prepared with soaked sabudana or tapioca pearls. It is typically prepared as a fasting meal especially in the states of Maharashtra, Karnataka & Gujarat but also practiced in other states too.
It takes about 15 mins to prepare 2 servings.
Ingredients:
Sabudana - 1 cup [soaked for 8 hours or overnight]
Peanuts - 1/2 cup [roasted and ground]
Green chillies - 2
Curry leaves - 10-12
Coriander leaves - 2 tbsp
Ginger - 1 inch
Oil - 2 tbsp
Jeera seeds - 2 tsp
Potato - 1 [cubed]
Salt - to taste
Sugar - 1 tsp
Lemon juice - 1 tsp
Method:
Mix the roasted and ground peanuts with the soaked Sabudana. This helps to remove the excess moisture from the sabudana.
Grind together green chillies, curry leaves, coriander leaves, ginger and keep it aside.
In a pan, heat oil. Add jeera seeds and fry till they splutter. Add the cubed potato and fry till they are cooked but still stay crunchy. Add the green chilli paste and mix well. Add the sabudana mixture and mix well till everything is well combined. Add salt, sugar and lemon juice and mix well.
