The aromatic biryani is one of the most loved dishes in the Indian cuisine. Here is a vegetarian version of this famous dish.

Yup I have heard things like there is no match in veg dishes for the non-veg biryani. However, this is a very tasty rice dish and it would be an amazing dish for guests at home.
This recipe takes about 45 mins to prepare 3 servings.
Ingredients:
Rice - 1 cup (preferably Basumati) [soaked for 20mins]
Diced vegetables - 3/4 cup (Beans, Carrot, Potato, Green Peas)
Onion - 3-4 (Chopped)
Cloves - 5-6
Cinnamon - 1 inch
Black pepper - 5-6
Cardamom - 3-4
Garam masala - 1 tsp
Red Chilli powder - 1 tsp
Curds - 3-4 tsp
Oil - 2 tbsp
Salt - to taste
Method:
Grind cloves, dal chini, black pepper and cardamom. Add the powdered mixture to the curds. Add Garam masala and red chilli powder. Mix well till all the powder is combined well with the curds. In a kadai, heat oil and add chopped onion. Saute a little before adding the mixed vegetables and saute again. And the curds mixture and mix well. Add previously soaked rice and mix well. Add 2 cups of water and required salt. Mix well and pressure cook for 2 whistles.
Serve the biryani with a side of cucumber raita. Let me know how you liked this recipe.
