One of the simplest recipes for a rice item is the veg pulao. It is the perfect lunch-box recipe and also perfect for simple family lunches.

This is my mother's recipe. She used to prepare this for my lunch-box a lot of times as it is one of the easiest recipes. I used to absolutely love it in my box and so did my friends.
It takes about 45 mins to prepare 2 servings.
Ingredients:
Basmati rice - 1 cup
Ginger - 1 inch
Green chillies - 3-4
Corriander leaves - one small bunch
Oil - 2-3 tbsp
Bay leaf - 1
Cinnamon - 1 inch
Cloves - 4-5
Diced vegetables - 3/4cup [Beans, Carrot, peas, capsicum]
Onion - 2 medium sized (thinly sliced)
Salt - to taste
Water - 1 3/4 cup
Method:
Soak Basmati rice for 20 mins. In a mixer, make a paste of ginger, green chillies and corriander leaves.
In a kadai, heat oil. Add bay leaf, cinnamon, cloves and saute. Add sliced Onion and fry till they turn translucent. Add in the diced vegetables and fry. Add the chilli paste and mix well. Add soaked rice and fry. Next add water and bring to boil. Finally add salt as required and mix well. Pressure cook the mixture for 2 whistles.
