Ambode

Chinmayi Ravichandir

Ambode or masala vada is a deep fried snack made of lentils. It is very easy to prepare and is an amazing snack for a rainy day.



Ambode is usually prepared at my house during festivals, and hence it is always a special snack according to me. This vada is prepared in south and coastal regions of Karnataka. This is my mother's recipe which makes very tasty and crispy vades.


The lentils need to be soaked 2 hours in prior. The rest of the preparation takes about 30 mins to make 10-12 vades.

 

Ingredients:

  • Chana dal - 1/2 cup [soaked in sufficient water for 2 hours]

  • Grated coconut - 1/3 cup

  • Green chillies - 3

  • Dried red chillies - 2

  • Ginger - 1 inch

  • Salt - as required

  • Coriander - 2 tbsp [finely chopped]

  • Curry leaves - 1 tbsp [finely chopped]

  • Dill leaves - 2 tbsp [finely chopped]

  • Oil - for frying

Method:

Drain all the water of the soaked dal before grinding. Roughly grind together soaked chana dal, grated coconut, green chillies, dried red chillies, ginger and salt. Transfer the mixture to a mixing bowl. Add chopped coriander, dill and curry leaves. Mix everything together. Take small amount of the mixture and form a ball. Flatten it and cover the cracked edges if any. Deep fry them in hot oil in medium heat. Serve hot while crispy.
