Chakli

One of my all time favorite fried snack is the crispy Chakli. Though it usually takes some efforts in making the authentic Chakli, I would say it is totally worth the efforts.



Chakli is a savoury snack mostly made in South India. It is a spiral shaped snack with a spiked surface. Chakli is typically made from flours of rice, bengal gram and black gram. This is my mother's never-fail recipe which I am really excited to share with you all.


It takes about 3 hours to prepare 25-30 pieces.


 

Ingredients:

  • Urad dal - 1 cup powdered [see steps below]

  • Rice flour - 5 cups

  • Butter - 1-2 tbsp

  • Sesame seeds - 1-2 tsp

  • Salt - to taste

  • Oil - for frying


Method:


Urad Dal Powder preparation: Clean the Urad dal using a wet cloth and dry the dal on a clean cloth. Roast the cleaned dal on a small flame till it turns a bit golden in color. Grind the roasted dal once it cools down and sieve the powder to remove lumps.


Add the urad dal powder and rice flour in 1:5 ratio in a large mixing bowl. Add butter, sesame seeds and salt. Mix all the ingredients with water as required till a thick dough is formed. Using a chakli mold, press the dough in a circular manner to form a chakli. Deep fry in oil till nice golden color.
