Crispy on the outside, soft on the inside, the Maddur Vade is a favorite of all natives in the Bangalore-Mysore region. The crispy onion makes the vade one of the best tea time snack.

I have the most amazing memories of having Maddur Vade at the Maddur junction, where it gets it's name from, while travelling back and forth between Bangalore and Mysore. Recently, I found out that it is actually very easy to make and hence sharing the recipe with you guys as well.
It takes about an hour to prepare 10-12 Maddur Vades.
Ingredients:
Rice flour - 1 cup
Maida - 1 cup
Rava (fine) - 1 cup
Roasted gram - 1/2 cup
Onion - 1 big [thinly sliced]
Green Chillies - 3-4 [finely chopped]
Coriander leaves - 2 tbsp [finely chopped]
Curry leaves - 2 tbsp [finely chopped]
Ginger - 1 tbsp [finely grated]
Red chilli powder - 2 tsp
Salt - to taste
Oil - 1 tbsp + for deep frying
Method:
Grind the roasted gram in a blender to form approximately 1 cup of fine powder. In a bowl, mix rice flour, maida, rava and the powdered gram floor. Add sliced onion, green chillies, coriander leaves, curry leaves, ginger, red chilli powder, salt and mix well. Add 1 tbsp of hot oil and mix with sufficient amount of water. Flatten a portion of the dough with greased hands and deep fry them in hot oil.
Serve hot with coconut chutney or tomato ketchup. Filter coffee or tea goes along well with the vades on a rainy day.
