My favorite starter while ordering at restaurants - the Hara Bhara Kabab. This is a super easy and healthy version.

As the name suggests, it is a kabab loaded with greens. Since we are not deep frying the kababs, I feel it is healthier and easier too.
It takes about 30 mins to prepare about 7 kababs using this recipe.
Ingredients:
Spinach - 1/2 cup [blanched]
Green chilly - 1
Green peas - 1/4 cup [boiled]
Paneer - 1 cup [grated]
Potato - 1/4 cup [boiled and mashed]
Ginger garlic paste - 1 tsp
Roasted besan - 1 tbsp
Chaat masala - 1 tsp
Garam masala - 1/4 tsp
Salt - to taste
Cashew nuts - 3-4
Oil - 1 tbsp
Method:
Blend together blanched spinach, green chilly and boiled green peas. Transfer the mixture to a bowl. Add grated paneer, boiled potato, ginger garlic paste, roasted besan, chaat masala, garam masala and salt. Mix well and form the kababs. Place half cashew nut on top and press slightly. Roast them on both sides on a well oiled pan.
The mint-curd chutney goes really well with these kebabs. Do let me know how you like them.
