Flaky, buttery, and packed with flavorful veggie stuffing, Veg Puffs are the ultimate snack to enjoy with a hot cup of chai.



Veg Puffs are a beloved Indian bakery classic, made with flaky puff pastry stuffed with a savory spiced vegetable filling. Originally inspired by British-style savory pastries, they quickly became a staple in Indian bakeries and tea stalls. Their crisp, golden layers paired with a hot cup of chai make them an irresistible snack. Easy to prepare yet indulgent, Veg Puffs are perfect for parties, picnics, or evening cravings.


This recipe takes about 20mins of prep time and 20 mins in the oven to prepare about 8 puffs.


Ingredients:

  • Puff pastry sheet - 1

  • Oil - 2tbsp + 1 tbsp

  • Onion - 1 small [finely chopped]

  • Beans - 8-10 [finely chopped]

  • Carrot - 1/4 [finely chopped]

  • Capsicum - 1/4 [finely chopped]

  • Potato - 2 [boiled and mashed]

  • Red chilli powder - 1 tbsp

  • Garam masala - 1/2 tbsp

  • Salt - to taste


Method:

Heat oil in a pan. Add chopped onions and saute. Add chopped beans and carrot and cook them. Add chopped capsicum and mix. Add boiled and mashed potatoes and mix. Add red chilli powder, garam masala powder and salt and mix well. Cut the puff pastry sheet into rectangles. Place the vegetable mixture on one half of the rectangle and fold the other half over it. Transfer them on to a baking tray and brush some oil on top of them. Bake them in the oven at 200C with the fan on for about 20mins.
