Hara bhara kebab is one of my favorite starters which I usually order in restaurants. It is basically a vegetarian kebab recipe prepared with fresh and leafy vegetables. This is an easy recipe to try out if you are craving for a kabab right now.

This is a recipe I have taken from Hebbar's kitchen. It is a simple yet tasty recipe for a nice starter at a house party which I am sure everyone would enjoy.
It requires about 1 hour to prepare around 8 kababs.
Ingredients:
Palak leaves/spinach - 1 bunch (Blanched)
Oil - 2 tsp
Green chilli -1 (finely chopped)
Capsicum - 1 (finely chopped)
Beans - 3/4 cup (chopped)
Peas - 3/4 cup
Potato - 2 (boiled and grated)
Paneer -3/4 cup (crumbled)
Coriander leaves - 3tbsp (finely chopped)
Corn flour - 1 tbsp
Breadcrumbs - 2 tbsp + 1 cup for coating
Red chilli powder - 1/2 tsp
Coriander powder - 1/2 tsp
Aamchur powder - 1 tsp
Garam masala powder - 1/2 tsp
Turmeric powder - 1/4 tsp
Salt - to taste
Cashews 8-10 (halved for garnish)
Oil - for deep frying
Method:
In a large kadai heat oil and add green chilli. Add capsicum and saute till the moisture disappears. Add beans and peas and saute well.Transfer to the blender and allow to cool completely. Blend to coarse paste along with blanched palak.Transfer the blended paste into a large mixing bowl. Add grated potato, paneer and coriander leaves. Further add corn flour and breadcrumbs. Add in the spices and salt and mix well. Grease hands with oil and make a small patties. Cover the patties with bread crumbs and garnish with cashew. Now deep fry the prepared patties into hot oil. Fry on medium hot oil, stirring occasionally.
Serve the hara bhara kabab with tomato ketchup or green chutney. Enjoy with your loved ones and let me know how it went.
