I came across this recipe while looking for different broccoli dishes since I just knew to stir fry them. The kababs and the sauce are two separate dishes which just go well together here.
It takes about 40mins to prepare 2 servings using this recipe.
Ingredients:
For the kababs:
Broccoli - 6-7 big florets
Green chilli - 1
Ginger - 1 inch
Cumin - 1/2 tsp
Turmeric powder - 1/4 tsp
Red chilli powder - 1/2 tsp
Salt - 1/2 tsp
Garam masala - 1/4 tsp
Aamchur powder - 1/4 tsp
Coriander leaves - 2 stems
Besan - 2 tsp
Oil - 3 tbsp
For the sauce:
Broccoli - 8-10 big florets [blanched]
Paneer - 50-60g [8-10 big pieces]
Oil - 1 tbsp
Green capsicum - 1/4 cup [chopped finely]
Sweet corn - 1/4 cup
Red chilli flakes - 1 tsp
Mixed herbs - 1 tsp
Salt - to taste
Cheese - as required [optional]
For herb rice:
Oil - 1 tbsp
Red chilli flakes - 1/2 tsp
Mixed herbs - 1/2 tsp
Basmati rice - 3/4 cup [cooked]
Salt - to taste
Coriander leaves - 1 tbsp [chopped finely]
Method:
In a mixer, grind broccoli, green chilli, ginger, cumin, turmeric powder, red chilli powder, salt, garam masala and aamchur powder. Transfer the mixture to a bowl. Add besan and mix well. Form kababs and shallow fry them in a pan till they turn crispy on both sides.
In a mixer, grind blanched broccoli and paneer to form a paste. Heat oil in a kadai and add chopped capsicum and sweet corn. Add the broccoli paste with little water if required and mix well. Add red chilli flakes, mixed herbs, salt and cheese. Give it a good mix.
In a pan, heat oil. Add red chilli flakes and mixed herbs. Add the cooked rice, salt and coriander leaves and mix well.
