Veg Fried Rice

Who doesn't like hot fried rice on a cold rainy day? It is THE comfort food for "those" days. I know the prep can be a bit time consuming, but the delicious fried rice is totally worth it.


This is a very simple recipe for fried rice which I have been following for few moths around now. I never used to make fried rice at home when I was in Bangalore before, as there were so many fried rice options for eating out. But since I moved, I started to make it at home as I have had cravings for this Indo-Chinese delicacy.


It takes about 45mins to prepare 2 servings using the below recipe.

 

Ingredients:

  • Rice - 1 cup [Basmati rice preferred]

  • Ginger - 1 inch [finely chopped]

  • Green chilli - 1 [slit in between]

  • Onion - 1 small [finely chopped]

  • Beans - 10-12 [finely chopped]

  • Carrot - 1/2 [finely chopped]

  • Cabbage - 1/4 [finely chopped]

  • Capsicum - 1/4 [finely chopped]

  • Tomato sauce - 1 tsp

  • Red chilli sauce - 2 tsp

  • Soy sauce - 2 tsp

  • Vinegar - 2 tsp

  • Pepper - 2 tsp

  • Salt - as required

  • Oil - 1 tsp + 2 tbsp

Method:

Boil about 5 cups of water in a vessel. Add about 1 tsp of salt and 1 tsp of oil. Add rice to the boiling water and let it cook. Once it is is just cooked, strain out the water and rinse through cold water. Make sure this step is followed, as you do not want the rice to become mushy and also do not overcook the rice.


In a kadai, add 2 tbsp oil and heat. Add chopped ginger and green chillies and fry. You can also add garlic and bit of finely chopped spring onions as well. Add onion and fry. Add all vegetables - beans, carrot and cabbage and fry them together. You can add any vegetable you like at this stage such as mushrooms (stir fried), sweet corn, etc. Add capsicum at the end so that the crunch is intact. Add all the sauces - tomato suace, red chilli sauce, soy sauce and vinegar. Add salt and pepper and mix everything well. Add the cooked rice and gently mix. Serve hot.

 

Adding this recipe under the continental dishes as it does involve lot of sauces without which it cannot be made and which is usually not used in our general Indian cooking.
