Khara bun

One of my favorite condiments in any Iyengar bakery in Bangalore is the Khara bun. As the name suggests (khara in Kannada translates to spicy), the spicy bun is the perfect snack for a relaxing evening.



I had never tried to actually make these buns at home as it is always easily available in many bakeries. Due to the lockdown during the pandemic, I thought of giving it a try as the option of buying it outside was ruled out.


It takes about 2 hours to prepare 8 buns.


 

Ingredients:

  • Milk - ¾ cup (luke warm)

  • Sugar - 1 tsp

  • Dry yeast - 1 tsp

  • Maida - 2 cups

  • Salt - ¾ tsp

  • Onion - 1 medium sized (finely chopped)

  • Cumin - 1 tsp

  • Red chilli powder - ½ tsp

  • Chilli flakes - 1 tsp

  • Green Chillies - 3 (finely chopped)

  • Curry leaves - 6-7 (finely chopped)

  • Coriander - 2 tbsp (finely chopped)

  • Butter - 2 tbsp

Method:

In a large bowl add warm milk, sugar and dry yeast. Mix well and rest for 5 minutes, so that yeast activates. Next add maida, salt and mix. Add chopped onion, cumin, chilli powder, chilli flakes, chopped green chillies, curry leaves and coriander. Mix well making sure everything is well combined. Knead for 5 minutes adding milk as required to form a smooth and soft dough. Add 2 butter and continue to knead the dough. The dough needs to turn non-sticky and yet remain super soft. Once the dough turns soft, tuck the dough. Cover and rest for 1 hour in a warm place to rise. After 1 hour, the dough rises indicating it is well poofed. Knead the dough again slightly removing air incorporated. Take a small ball sized dough and tuck the dough forming small balls. Make sure to tuck the dough to prevent from any scars appearing. Place the balls over the tray lined with butter paper. Cover with a moist cloth and allow to rest for 20 minutes or until the dough doubles. Brush the dough with milk without damaging the balls. Place the tray into the preheated oven and bake at 180°C for 30 minutes, or until the bun turns golden brown from top. Once the bun is out of the oven, rub with butter to get a shiny look. Cool the bun completely before serving.
