Originating from Mumbai, the city known for its variety of street food, Pav Bhaji is now common in most parts of the country and well liked in Bangalore. Here is my recipe for the tasty Pav Bhaji.

This is a simple recipe which I have taken out from my mother's cookbook. All ingredients used here are easily available.
It takes about 45 mins for 4-5 servings.
Ingredients:
Potato - 1/4 kg
Green peas - 100g
Carrot - 2 (big)
Cauliflower - 100g
Beans - 100g
Capsicum - 1 (chopped)
Tomato - 3 (chopped)
Onion - 2 + 1/2 for garnish (chopped)
Butter - 1 tbsp
Oil - 2 tsp
Ginger - 1 inch
Turmeric powder - 1 tsp
Red chilli powder - 1 tsp
Pav Bhaji masala - 2 tsp
Salt - to taste
Coriander leaves - 2 tbsp
Lemon peices
Pav - 8-10 buns
Method:
Cut all vegetables and pressure cook - potato, peas, carrot, cauliflower and beans. Mash them once the vegetables are cooked.
In a kadai, heat butter and oil together. Add ginger and fry. Add 2 chopped onions and fry till they are transparent. Add the tomato and fry till it softens. Add the capsicum and fry again, but not too much as we want the crunch on the capsicum to remain intact. Add the boiled and mashed vegetable mixture and fry. Add turmeric powder, red chilli powder, pav bhaji masala and salt. Mix well till everything is combined. Adjust consistency with small amounts of water.
On a hot tawa, roast the half-cut buttered pav on both sides.
Serve the pav and bhaji with chopped onion, coriander leaves and a piece of lemon.
