Sabudana Vada is the perfect snack with your evening tea. Crispy on the outside and chewy on the inside, this is my all time favorite snack and hope it will be yours too after you try it once.

The Sabudana Vada is popular dish in Maharashtra and can be found as a popular street food in Northern parts of Karnataka as well. I got this recipe from my neighbor who had lived in Pune.
It takes about 45 mins to prepare around 15 servings after the Tapioka is soaked.
Ingredients:
Sabudana/tapioca - 1 cup
Potato - 2 (boiled & mashed)
Peanuts -½ cup (roasted & crushed)
Cumin -1 tsp
Green chilli - 1 (finely chopped)
Coriander - 2 tbsp (finely chopped)
Salt - to taste
oil for frying
Method:
Firstly, in a large bowl take sabudana and soak with enough water for 3 hours or over night. Drain off the water and rest for 30 minutes, allowing to drain off the water completely. Take the soaked sabudana in a large bowl. Add mashed potato and roasted peanuts. Add cumin, chilli, coriander and salt. Mix and mash well with your hand. Prepare vada by deep frying in oil.
