Noodles is an all time favorite of mine, and schezwan noodles is in the top of the list as it is spicy and tangy. It is super easy to prepare. Here is my recipe.

This Indo-Chinese dish is an Indianized version of the noodles which is a popular dish in itself. This is a recipe which I have come up with after experimenting on a few recipes on the net.
It takes about 20 mins to prepare 2 servings.
Ingredients:
Noodles - 250g
Water - 5-6 cups
Salt - 1 tsp
Oil - 1 tsp + 2 tbsp
Ginger - 1 inch [chopped]
Onion - 1 small [thinly sliced]
Beans - 4-5 [chopped]
Carrot - 1/2 [thinly chopped]
Capsicum - 1/4 [thinly chopped]
Cabbage - 4 tbsp [shredded]
Vinegar - 1 tsp
Chilli sauce - 1 tsp
Tomato sauce - 1 tsp
Soya sauce - 1/2 tsp
Schezwan sauce - 2 tsp
Salt - to taste
Method:
Heat the water in a large vessel. Add salt and 1 tsp of oil into it. Add the noodles once the water is boiling. Cook till Al-dante. Drain the water and pour a cup of regular or cold water on top to stop the cooking process.
In a kadai, heat 2 tbsp oil. Add ginger and saute. Add sliced onion and fry till onion is cooked. Add all the vegetables - beans, carrot, capsicum and cabbage - and fry till vegetables are cooked. Do not over cook the vegetables. Add all the sauces - vinegar, chilli sauce, tomato sauce, soya sauce and schezwan sauce - and mix well. Add the cooked noodles and salt. Mix till everything is well combined.
Any additions such as spring onions, garlic, etc. can be added as per your taste palette. Do let me know how you liked it.
